Bran flax muffins

One of my plans (among many, this fabulously exciting new year) is to convert my crew to clean eating...or at least cleanER. It is not easy to pry those cheese puffs out of Sweet Love's vise-gripped fingers. Of the recipes we have tried so far, these muffins have been the most hailed among Team Wilson.

They aren't going to win any beauty queen awards, but my oh my these babies are tasty!

Bran Flax Muffins
(recipe taken from the backside of the Bob's Red Mill Flaxseed Meal)

1-1/2 cups unbleached white flour
3/4 cup Flaxseed Meal
3/4 cup oat bran
1 cup brown sugar
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp ground cinnamon
1-1/2 cups carrots, shredded
2 apples, peeled and shredded
1/2 cup raisins
1 cup nuts, chopped (I used walnuts)
3/4 cup milk
2 eggs, beaten
1 tsp vanilla extract

Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt, and cinnamon in large bowl.

Stir in carrots, apples, raisins, and nuts.

Combine milk, beaten eggs, and vanilla.

Pour liquid ingredients into dry ingredients.

Stir until ingredients are moistened. Do not over mix. {At this point you will question whether or not this mix would even pass regulations for dog food...I encourage you to press on. They turn out ugly but scrumptious.}

Fill muffin cups 3/4 full. Bake at 350 for 15-20 minutes. Yields 15 medium muffins.
